How to Make Meringue Recipe 2

Meringue is a very sweet dessert, or pie topping made mostly from sugar and egg whites. There are many different recipes. Here is a recipe for meringue pie or cake topping.

Heat oven to 350 degrees.

3 egg whites
1/8 tsp salt
1/8 tsp cream of tartar
6 TBSP sugar

Add salt and cream of tartar to egg whites. Beat until stiff. Add sugar, two spoons at a time and continue to beat until mixture stands in peaks when you lift the beater or when it is the consistency of marshmallows.

* To make a 9 inch pie, add 1/3 more of all ingredients required.

How to make Pie Meringue

Meringue is a very sweet dessert, or pie topping made mostly from sugar and egg whites.

2 egg whites
1/4 tsp salt
4 TBSP sugar

Beat egg whites with salt until stiff.

Beat in sugar slowly until smooth and glossy.

For variety

Banana Cream Pie - Slice 2 bananas into pie shell before adding the filling.

Coconut Cream Pie - Add 1/2 c. shredded coconut to cream filling; turn into a baked pie shell. Top with meringue and sprinkle with coconut. Bake as for cream pie.

Chocolate cream pie - Make filling as for cream pie, adding 1/2 c. milk, 1/4 c. sugar, and 2 1/2 squares chocolate. Melt chocolate in milk. Top with meringue and bake, or serve plain with whipped cream.

Cream Pie

1/2 c. sugar
4 TBSP flour
1/4 tsp salt
2 c. milk
2 egg yolks, slightly beaten
2 TBSP table fat (butter)
1 tsp vanilla
9 inch baked pastry shell or graham cracker shell

Mix dry ingredients with a little of the milk. Add the rest of the milk. Cook over boiling water, stirring until thick. Cover and cook 15 minutes longer, stirring occasionally.

Add a little of the hot mixture to egg yolks. Pour back and cook a few minutes longer. Add table fat (butter) and vanilla.

Pour filling into pie shell, cool slightly, and cover with meringue. See meringue recipe for cream pie variations.

Bake at 325 degrees F 12 - 15 minutes.

Graham Cracker Pie Crust Shell

Makes a 9 inch pie shell.

15 graham crackers
1/3 c. melted table fat (butter)
1/3 c. sugar
1/4 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg

Roll crackers fine.

Add other ingredients.

Turn into pie pan and pat into firm smooth shell.

Chill until firm.
